Compuestos bioactivos en tres tipos de Capsicum annuum L. durante el procesamiento y almacenamiento

El género Capsicum, particularmente Capsicum annuum L., representa un cultivo de alto valor nutracéutico debido a su contenido de capsaicinoides, compuestos fenólicos, flavonoides, ácido ascórbico y actividad antioxidante. Sin embargo, el procesamiento y almacenamiento pueden modificar significativamente la estabilidad de estos compuestos bioactivos. El objetivo fue evaluar los cambios en capsaicina, ácido ascórbico, compuestos fenólicos totales, flavonoides totales y actividad antioxidante del radical ABTS (2,2'-azino-bis(3-etilbenzotiazolina-6-sulfónico)), en tres variedades de chile C. annuum (de árbol, serrano y jalapeño), evsaluadas en fresco y procesadas durante cinco días consecutivos. Las determinaciones se realizaron en triplicado y el análisis estadístico se efectuó mediante un diseño factorial con medidas repetidas. En muestras frescas, el chile de árbol presentó los valores más altos de capsaicina (3 584.2 mg 100 g-1 peso fresco), ácido ascórbico (1 025.0 mg 100 g-1), actividad antioxidante (35 028.6 µmol equivalentes de Trolox 100 g-1), fenólicos totales (65.282 mg equivalentes de ácido gálico g-1) y flavonoides totales (118.963 mg equivalentes de quercetina g-1). En salsa, se observó una reducción significativa en todas las variables. La capsaicina disminuyó hasta 173.8 mg 100 g-1 y el ácido ascórbico hasta 187.5 mg 100 g-1 al día cinco. A pesar del descenso, la jerarquía varietal se mantuvo, con árbol > serrano > jalapeño en la mayoría de las variables. Se concluye que el procesamiento reduce la concentración absoluta de compuestos bioactivos, pero conserva el patrón varietal, destacando al chile de árbol como la variedad con mayor potencial funcional.
