Dormitator latifrons is a fish with aquaculture potential distributed along the Pacific slope from California to Peru. However, information on its physiology and culture is scarce. This study evaluated the effect of dietary inclusion of the yeast Saccharomyces cerevisiae on growth, survival, hematocrit, and respiratory burst in D. latifrons. Three experimental diets were prepared with 1, 3, and 5% yeast, in addition to a negative control. A total of 120 juveniles of D. latifrons 9 ± 1 cm and 9 ± 1.5 g were distributed in 12 tanks of 400 L, with three replicates per treatment, for eight weeks. Three biometries were performed, and blood samples were collected every two weeks. The inclusion of S. cerevisiae did not have negative effects on the growth or health status of D. latifrons. These results suggest the possibility of evaluating additional inclusion levels.
