Production of fructooligosaccharides in sugarcane (Saccharum officinarum L.) juice by Bacillus subtilis

The production of fructooligosaccharides (FOS) from sugarcane juice through microbial fermentation has been scarcely explored. The aim of this study was to evaluate the ability of Bacillus subtilis to synthesize FOS using fresh sugarcane juice (Saccharum officinarum L.) as a substrate under submerged fermentation conditions. FOS production was optimized using a Taguchi L9 experimental design and quantified by semiquantitative thin-layer chromatography (TLC) coupled with digital image analysis. Fresh sugarcane juice under its native pH and °Brix conditions showed the best performance, reaching 7.44 g L-1 of FOS after 48 h of fermentation and a conversion of 10.2% of the initial sucrose. The results demonstrate the feasibility of using fresh sugarcane juice as a direct feedstock for FOS production and highlight its potential for the development of prebiotic ingredients.
